Garden of Light Says "No to Sulfur Dioxide!"

Sulfur dioxide, a gas formed from burning sulfur, is used to keep dried fruits plump and colorful. For instance, a treated apricot will be plump and bright orange, while an untreated dried apricot will be shriveled and brown (but still taste great.) The main concern lies with the incidence of serious allergic reactions from sulfur dioxide. Reactions range from headaches and nausea, to rash and tissue swelling. Especially susceptible are asthmatics, as the reaction can lead, in rare cases, to respiratory failure. Furthermore, sulfur dioxide destroys B vitamins in your system, can cause kidney malfunction, and is suspected to cause genetic mutations.
